Turkey Slider with Mango Chutney

(yield about 40 patties)

For the Burger:

  • 2 lbs, Lean Ground Turkey
  • 2 tsp ground Coriander
  • 2 tsp ground Cumin
  • 2 tsp ground Ginger
  • 2 tsp curry powder (yellow)
  • 2 tsp ground black pepper
  • 4 gloves Fresh crushed garlic
  • 2 Tbl. Salt
  • 2 whole eggs
  • 1 cup fresh bread crumbs

4 doz. Slider buns

For the turkey Patty:

  • Drain raw turkey meat of any blood or excess water.
  • Sanitize your hands, utensils and workspace before proceeding.
  • Mix dry ingredients in a small bowl and reserve.
  • Add the garlic and the eggs and gently mix into the meat. Add the dry spices and bead crumbs. Blend well.
  • Allow the mixture to rest for a few minutes and allow the breadcrumbs to absorb the moisture
  • Test the flavor by cooking a small patty in a skillet. Adjust as necessary.
  • Use a scoop suitable for the desired size of the patty (a #20 scoop/1.5 oz.) form small meatballs and place them on a parchment lined sheet pan leaving, then press them into patties. Refrigerate
